Steak Wraps with Hummus

This is a recipe I found somewhere along the lines from Jamie Oliver.  I love the ease of these wraps on an evening I don’t feel like being in the kitchen too long.  Steak is always a hit around my boys, sure fire crowd pleaser.  The steaks can be done indoors on a grill pan or outdoors on your grill. I served it tonight with my cucumber tomato salad. For the vegetarian version, simply omit the steak and add tomatoes.

Serves 4

Ingredients:

  • olive oil for grill pan
  • 1-1 1/2 lbs. sirloin steaks
  • salt and freshly ground black pepper
  • 4-6 medium sized flour tortillas
  • 1 small tub hummus (any flavor)
  • 2 cups baby arugula, baby spinach, or spring mix
  • 1/2 cup sour cream (I use low fat)
  • 1 tablespoon paprika, for sprinkling
Directions:
1.)  Heat a grill pan over medium heat.  Season both sides of the steaks with salt and pepper.  Drizzle a bit of olive oil over the pan and add steaks when pan is hot (you should hear a nice sizzle when you add them).  Grill steaks for 4-5 minutes on the first side, turn and continue grilling other side for 4-5 more minutes (4 minutes per side should be medium, depending on thickness).  Remove to a cutting board and let sit for a few minutes before cutting, to let the juices settle.  Slice into thin slices.
2.)  Heat a medium saute pan over medium heat and heat tortillas one by one until heated through and softened, about 1 minute on each side.
3.)  Place a tortilla on a plate, slather on a good amount of hummus, top with steak slices, a small handful of arugula, a dollop of sour cream and a pinch of paprika.  There is no science to this, just make it taste good.
